Whole vanilla beans vs ground vanilla vs caviar
Three formats from the same cured bean, not interchangeable. Whole pods suit infusion and presentation, ground vanilla suits dry-mix and baking, and caviar suits dairy and confectionery where visible flecks matter.

Why grade and format go together
Grading for Indonesian vanilla — grown across Bali, Java, Sulawesi and Papua — is generally built around length, moisture and appearance, but standards vary by industry and contract. A bean that grades well for whole-pod retail may not be the most economical to grind, and ground vanilla is often milled from lower grades not suited to retail-length beans.

Which format fits your production
Format and grade are usually decided together.
Whole pods, ground and caviar compared
The formats diverge in how much processing happens before export.
| Whole pods — use | Infusion, extract production, premium retail repack |
|---|---|
| Whole pods — handling | Humidity-controlled storage; buyer controls final cut |
| Ground — use | Baking, dry-mix, spice blends |
| Ground — handling | Shorter practical shelf life once milled; moisture-sensitive |
| Caviar / seeds — use | Dairy, confectionery, visible-fleck products |
| Caviar / seeds — handling | Cold-chain or short-transit, depending on form |
Specify format at inquiry stage — drying, sorting and packing differ for each.

Each format ships differently
Packing differs by format even for the same origin and grade. The desk confirms format-specific packing and Incoterms in writing before shipment rather than using one template.
- Whole pods: vacuum-sealed or wax-paper bundles in moisture-controlled cartons
- Ground: sealed, light-blocking containers — check transit time against shelf life
- Caviar and seed paste: shortest, most controlled transit; sea or air decided case by case

Format questions
When should I choose whole vanilla pods?
When you want control over extraction or infusion, or the pod is part of the product story. Grading focuses on length, moisture, pliability and surface condition, which affect extraction yield and retail appearance.
When does ground vanilla make more sense?
For high-volume dry applications needing consistent dosing. Grinding exposes more surface area, so ground vanilla is more sensitive to moisture and light — packaging and container conditions matter more.
What exactly is vanilla caviar?
The seed pulp scraped from inside the pod, supplied as paste, seed mass or bulk-scraped product. Ice cream and gelato makers often weigh it against whole-pod infusion depending on batch size and equipment.
Can I order more than one format?
Yes — for example whole pods for one line and ground vanilla for another. The desk prepares a written specification and quotation once grade, volume range and destination market are confirmed.
